Filet Mignons With Roquefort Sauce


Rated 5 stars this is our family's favorite specialty steak, but with the cost of Filets we don't fix it often. We still want to share it with you. It's from the Williams Sonoma French Cookbook.

Difficulty: Easy
Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 4

INGREDIENTS:

4 filet mignon steaks, 6-8 oz. each
Salt and freshly ground pepper
3 T. olive oil
2 cloves garlic, minced
3/4 cup tawny port wine
1/2 cup heavy cream
1/4 lb. Roquefort Cheese, crumbled
2 t. finely chopped fresh flat-leaf Italian parsley

DIRECTIONS:

Liberally season both sides of the steaks with salt and pepper. Select a frying pan large enough to fit the steaks without crowding. Heat the olive oil over medium-high heat. Add the steaks and sear on one side until well browned, about 5 minutes. Turn the steaks and sear on the second side until well browned and an instant-read thermometer inserted into the thickest part registers 135F for medium-rare, about 3 minutes longer, depending on thickness. Transfer to a warmed platter and cover loosely with foil.

Add the garlic and Port to the pan and bring to a boil over high heat, stirring with a wooden spoon to scrape up any browned bits from the pan bottom. Boil until reduced to 1/3 cup about 2 minutes. Whisk in the cream and return to a boil. Boil until reduced by half, about 2 minutes longer. Add the cheese and whisk until the cheese melts and the sauce is thickened, about 1 minute. Season to taste with salt and pepper.

Transfer the steaks to warmed individual plates and spoon the sauce over them. Garnish with the parsley and serve at once.

Ribollita - Italian Vegetable Soup


I made this for the first time last night for our Anniversary Dinner. It was wonderful - 5 stars!! I got it from the Williams Sonoma Italian Cookbook - enjoy!

Difficulty: Easy
Prep Time: 30 minutes
Cook Time: 1 hour
Servings: 8

INGREDIENTS:
1 15 oz. can Cannellini beans
1 yellow onion, chopped
1 celery stalk, chopped
2 carrots, peeled and sliced
1 large potato, peeled and diced
2 zucchini - sliced and halved
1/2 cup extra virgin olive oil (EVOO)
1 cup cauliflower, coarsely chopped
4 - 5 kale leaves (they recommended dinosaur kale)
1 cup shredded swiss chard leaves
1/4 cup minced fresh herbs: italian parsley, rosemary and sage
2.5 quarts chicken stock
Salt and freshly ground pepper
12 - 15 slices day old coarse country bread with crusts
1/2 cup freshly grated parmesan cheese

Drain beans and set aside.

In a large soup pot over medium high heat, heat the olive oil. Add the onion, celery and carrots and saute' until the onion is golden, 3 - 4 minutes. Add the cauliflower and cook, stirring frequently, until tender-crisp, about 5 minutes. Add the kale, chard, zucchini and potato (in that order) and cook stirring constantly for 5 minutes.

Add the mixed herbs and the beans to the pot. Pour in the stock, bring to a boil over medium-high heat, and cook uncovered until the vegetables are tender, about 30 minutes. Season to tast with salt and pepper. Remove from the heat.

Meanwhile, preheat the oven to 425 degrees.

Ladle enough soup into a 13 x 9 baking dish to cover the bottom. Top with 4 - 5 toasted bread slices, trimming them to fit if necessary, and then with a layer of soup. Sprinkle evenly with 1/2 of the Parmesan cheese. Repeat the layers of bread, soup and cheese. Bake until heated through about 20 minutes. Remove from the oven and drizzle with olive oil.

Ladle the ribollita into warmed soup bowls and serve.

IMPORTANT NOTE: After making this last night I think I would make one change...spread olive oil on bread and sprinkle with parmesan cheese. Place under broiler until browned and cheese melts. Place one or two slices in individual bowls and ladle hot soup over - serve immediately. (If anyone tries this recipe with this revision, please let us know if it works.)

Chewy Chocolate Cookies - "Death by chocolate"




Makes 16 of the most amazing cookies you will ever have!! The directions seem a bit tedious but trust me it is worth every single minute of prep time!!

1/3 c. granulated sugar, plus ½ cup for coating
1 ½ c. all-purpose flour
¾ c. cocoa powder
½ t. baking soda
¼ t. plus 1/8 t. salt
½ c. dark corn syrup
1 large egg white
1 t. vanilla extract
12 T. (1 ½ sticks) unsalted butter, softened (70 degrees)
1/3 c. packed dark brown sugar
4 ounces dark chocolate chunks, chopped ½-inch pieces

1. Adjust oven racks to upper and lower-middle positions and heat oven to 375 degrees.
2. Whisk flour, cocoa powder, baking soda, and salt together in medium bowl. Whisk corn syrup, egg white, and vanilla together in small bowl.
3. In mixer with paddle attachment beat butter, brown sugar, and 1/3 c. granulated sugar at medium-high speed until light and fluffy, about 2 minutes. Reduce speed to medium-low, add corn syrup mixture, and beat until fully incorporated, about 20 seconds, scraping bowl once with rubber spatula. With mixer running at low speed, add flour mixture and chopped chocolate; mix until just incorporated, about 30 seconds, scraping bowl. Give dough final stir with rubber spatula to ensure that no pickets of flour remain at bottom. Chill dough 30 minutes to firm slightly (do no chill longer than 30 minutes!)
4. Roll dough into 16 even portioned balls, about 1 ½ inch in diameter. Drop dough balls into baking dish with sugar and toss to coat. Set dough balls on prepared baking sheet, spacing about 2 inches apart; repeat with second batch. Bake, reversing position of the baking sheets halfway through baking (from top to bottom and front to back), until cookies are puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone). Bake 10-11 minutes, do not overbake.
4. Cool cookies on baking sheet 5 minutes, then use wide metal spatula to transfer cookies to wire rack; cool cookies.

Canned Soup Boosters

I haven't tried these, but they sound like a yummy way to stretch your grocery budget. Let us know what you think if you try any of these.

CANNED SOUP BOOSTERS
(Add to canned soup while heating)

- Stir frozen broccoli florets (thawed) into cream of chicken soup

- Add coleslaw mix (bag) to minestrone.

- Stir sliced chorizo sausage into black bean soup.

- Sprinkle shredded Swiss cheese on servings of split-pea soup.

- Stir basil pesto (tub) into hot tomato soup.

- Stir tomatoes with green chilies (can) into Cheddar cheese soup.

- Add diced ham to cream of asparagus soup.

- Sprinkle shredded Parmesan cheese on servings of lentil soup.

- Stir corn (can) into New England clam chowder.

Roasted Asparagus Wrapped in Bacon

This is a great way to eat asparagus!  Very easy to make. It was a 5 star side dish.

Ingredients:
1-2lbs fresh asparagus
1 pkg of bacon
Olive oil
Kosher salt
Cracked black pepper
Parmesan cheese

Directions:
Preheat oven to 400.
Wash and cut bottoms off asparagus.  Lay asparagus on cookie sheet, toss with EVOO, garlic powder, salt and pepper.  Bunch in groups of 5 or 6.  Wrap groups in bacon.  If you have a wire rack, place on top of cookie sheet for the bacon fat to drip.  Cook in oven for 10-12 minutes.  When cooked sprinkle parmesan cheese on top.

Sweet Potato Gnocchi with Maple Cinnamon Sage Brown Butter


This is definitely a treat for dinner. It was a bit involved and took time, but it is totally worth it!!! This week I am making meals that are a bit more involved and fancy for my Husband to celebrate Thanksgiving. He absolutely loves food and misses his families cooking around the Holiday's. Hopefully I can bring a bit of home to him. Gnocchi is an Italian dish that I usually only like when his Grandfather makes it. Although, this recipe was pretty good. Not as good as his, but still very delicious.


For the Gnocchi:
2 pounds sweet potatoes
2/3 cup whole milk ricotta cheese
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground black pepper
1 1/4 cups all-purpose flour, plus 1/3 cup for the work surface

For the Maple Cinnamon Sage Brown Butter:
1/2 cup unsalted butter (1 stick)
20 fresh sage leaves
1 teaspoon ground cinnamon
2 tablespoons maple syrup
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions
For the Gnocchi: Preheat the oven to 425 degrees F.

Pierce the sweet potato with a fork. Bake the sweet potatoes until tender and fully cooked, between 40 to 55 minutes depending on size. Cool slightly. Cut in half and scoop the flesh into a large bowl. Mash the sweet potatoes and transfer to a large measuring cup to make sure the sweet potatoes measure about 2 cups. Transfer the mashed sweet potatoes back to the large bowl. Add the ricotta cheese, salt, cinnamon, and pepper and blend until well mixed. Add the flour, 1/2 cup at a time until a soft dough forms. Lightly flour a work surface and place the dough in a ball on the work surface. Divide the dough into 6 equal balls. Roll out each ball into a 1-inch wide rope. Cut each rope into 1-inch pieces. Roll the gnocchi over the tines of a fork. Transfer the formed gnocchi to a large baking sheet. Continue with the remaining gnocchi.

Meanwhile, bring a large pot of salted water to a boil over high heat. Add the gnocchi in 3 batches and cook until tender but still firm to the bite, stirring occasionally, about 5 to 6 minutes. Drain the gnocchi using a slotted spoon onto a baking sheet. Tent with foil to keep warm and continue with the remaining gnocchi.

For the Brown Butter sauce: While the gnocchi are cooking melt the butter in a large saute pan over medium heat. When the butter has melted add the sage leaves. Continue to cook, swirling the butter occasionally, until the foam subsides and the milk solids begin to brown. Remove the pan from the heat. Stir in the cinnamon, maple syrup, salt, and pepper. Careful, the mixture will bubble up. Gently stir the mixture. When the bubbles subside, toss the cooked gnocchi in the brown butter. Transfer the gnocchi to a serving dish and serve immediately.

I didn't cook all the Gnocchi since I  knew it was filling and we wouldn't eat all of it.  I cooked half of the batch and froze the rest.  They should last in the freezer for a couple months.  I put them on a cook sheet and froze them and then after they were individually frozen I put them into a ziplock bag.  This way they won't stick and you can take out a few and cook up a quick meal.

Easy Chicken-Mushroom Quesadillas

I just tried this out tonight and my mom and I loved them! I didn't have any cumin, however, so I can imagine adding it would make it even better.

Difficulty: Easy
Prep Time: 12
Cook Time: 16
Yield: 4 servings


1 tablespoon olive oil


1 large onion, chopped (about 2 cups)

8 ounces white button mushrooms (about 3 cups)

3 cloves garlic, minced

2 cups cooked chopped skinless, boneless chicken breast

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon dried oregano

2 cups baby spinach leaves, sliced into ribbons

1/2 teaspoon salt

1/4 teaspoon fresh ground black pepper

4 (10-inch) flour tortillas

1 cup shredded Mexican or Cheddar cheese



Topping:


1/2 cup salsa

1/4 sour cream



Heat the oil in a large skillet over a medium heat. Add the onions and mushrooms and cook until the mushroom water is evaporated and they begin to brown, 5 to 7 minutes. Add the garlic and cook for 1 minute more. Add chicken, cumin, chili powder and oregano and stir until all spices are incorporated. Add spinach, salt and pepper and cook until spinach is wilted, about 2 minutes.



Lay 1 tortilla on a flat work surface and sprinkle with 1/4 cup shredded cheese. Spoon 1/4 chicken and vegetable mixture on top of cheese, then top with an additional 1/4 cup cheese. Top with another flour tortilla. Heat a large nonstick skillet with cooking spray over medium heat. Carefully place 1 quesadilla in a pan and cook a few minutes. Using a large spatula, flip the quesadilla and cook a few more minutes (just like grill cheese sandwiches :)

Cinnamon-Apple Cake

My family makes this recipe around the holidays. It is a favorite with all our neighbors as well. It's from the October 1997 issue of Cooking Light and we've been making it ever since. It's a must have for the holidays(just don't think about the calories!) Enjoy!


Difficulty: Easy
Preparation: 20 minutes
Cook Time: 1 hour and 15 minutes
I usually put in it a 9 x 13 in pan to yield more (smaller) servings since it's so rich.



Ingredients

  • 1 3/4 cups sugar, divided
  • 1/2 cup stick margarine, softened
  • 1 teaspoon vanilla extract
  • 6 ounces block-style fat-free cream cheese, softened (about 3/4 cup)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups chopped peeled Rome apple (about 2 large)
  • Cooking spray

Preparation

Preheat oven to 350°.

Beat 1 1/2 cups sugar, margarine, vanilla, and cream cheese at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture, beating at low speed until blended.

Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons cinnamon mixture and apple in a bowl, and stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.

Bake at 350° for 1 hour and 15 minutes or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack, and cut using a serrated knife.

Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the cooking time by 5 minutes.

Everyday Meatloaf


This recipe came from my mom's Better Homes and Gardens red and white plaid cookbook. She received it as a wedding present back in 1947. It has been a family favorite long before I was even born - that's a loooong time ago! :-)

INGREDIENTS:
2/3 cup dry bread crumbs (I use Italian)
1/2 cup milk
1-1/2 lb. ground chuck
2 slightly beaten eggs
1/4 cup onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sage

DIRECTIONS:
Soak bread crumbs in milk; add meat, eggs, onion and seasonings. Mix well. Form into a loaf and place in greased 13 x 9 pan. Spread Piquant Sauce (below) over top and bake for 1 hour at 350 degrees or until done.

PIQUANT SAUCE:
3 Tablespoons brown sugar
1/4 teaspoon nutmeg
1/4 cup ketchup
1 teaspoon dry mustard
