Miso Healing Bowl Soup






INGREDIENTS:

3 Tablespoons grapeseed oil
1 red onion, sliced thin
2 cloves garlic, minced
2 - 32 oz. cartons of chicken stock
2 Tablespoons Miso paste (red)
1 bunch broccoli or broccolini rabe, cut into small pieces
4 large carrots, peeled and sliced thin
2 in. piece of fresh ginger, sliced thin
1 bunch sunflower sprouts
8 oz. shitake mushrooms, stems removed and sliced thin
2 boneless chicken breasts, cooked and diced
1 large bunch purple kale

1 can water chestnuts, optional
1/4 teaspoon red pepper flakes


(I used all organic ingredients, but you don't have to.)

DIRECTIONS:

Saute' garlic and onions in hot oil until fragrant, but not thoroughly cooked. Set aside.
Place chicken stock in large pot and bring to a boil.
Add Miso paste and ginger. Stir to dissolve.
Add broccoli, carrots, onions and garlic. Cook on medium heat for 10 minutes.
Add remaining ingredients.
Stir well and cook for 5 - 10 minutes.

Serve hot as is, or over rice. You could even add rice noodles, if desired.

Best Ever Chicken Noodle Soup



INGREDIENTS:

1 - 3.5 to 4 lb. chicken cut up with bone and skin
2 stalks celery, halved
1 large onion, quartered
1 carrot, scraped and halved
1 turnip, peeled and halved
2 cloves garlic, crushed
1 1/4 teaspoons salt
3/4 teaspoon pepper
1/4 teaspoon dried tarragon
4 cups water
3 cups chicken broth
4 ounces medium egg noodles, uncooked
1 large onion, chopped
2 stalks celery, sliced
2 carrots, scraped and sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon tarragon


DIRECTIONS:


  • Combine first 11 ingredients in a large Dutch oven, and bring mixture to a boil over high heat. Reduce heat; cook 45  minutes or until chicken is tender.
  • Remove chicken from broth, reserving broth; set chicken aside to cool slightly.
  • Pour broth through a wire-mesh strainer into a large bowl; discard cooked vegetables. Remove and discard fat from broth; return broth to Dutch oven.
  • Cook noodles according to package directions, omitting salt and far; drain and set aside.
  • Skin and bone chicken; chop chicken meat, and set aside.
  • Add chopped onion, sliced celery, and sliced carrot to chicken broth; bring to a boil over high heat. Reduce heat; simmer 15 minutes.\
  • Stir in chopped chicken and noodles; add 1/2 teaspoon salt and remaining ingredients. Cook until thoroughly heated. Yield 10 cups.

Lemon Cilantro Lentil Soup

Ingredients:

Big handful chopped fresh cilantro
4-5 tablespoons olive oil
1 teaspoon salt
1 medium onion, chopped
1 medium carrot, chopped
1/2 teaspoon ground allspice
1 teaspoon cumin
1 T. garlic, minced
1 cup brown lentils, picked over and rinsed
6 cups chicken stock
2 tablespoons fresh lemon juice

Directions:

In a large pot heat olive oil. Add chopped onions and carrots and cook until tender,
about 5 minutes. Add garlic and cook for 1 minute. Stir in spices and lentils,
pour in stock. Bring to a boil and then reduce heat and cover. Cook for 30 minutes or until lentils are tender.

In a food processor blend 4 T. Oil, cilantro and 1 garlic clove until it is a purée. Set aside.

When the lentils are soft blend 2 cups of the lentils in a blender and return to soup. Stir in the cilantro oil and fresh lemon juice.

This soup is perfect with hot sauce on top and a nice piece of grilled chicken.

It is Gluten-free and dairy free too!

Soup's On

Szechwan Carrot Soup with Coconut Quinoa


I wanted a basic ginger carrot soup, but planned to kick up the heat -- I found this recipe at Epicurious, and made only a few modifications from the original version.  It is easy and delicious.  Later this afternoon, I started flipping through a new library gem, Bryant Terry's The Inspired Vegan and flagged his coconut quinoa recipe as a perfect side.  It, too, came together in a breeze and as I stared at the two pans side-by-side, I realized that they belonged together.  I ladled the spicy carrot soup over the coconut quinoa and a new favorite emerged - Mike and I scarfed down two bowls each.  So - enjoy!

Carrot Soup (about 6 cups)

Ingredients

2 medium yellow onions, chopped
4-6 cloves garlic, smashed or chopped
1 teaspoon coconut oil
2 tablespoons water
1 lb (unpeeled if organic) carrots chopped in 2-inch chunks
3 inch peeled piece of fresh ginger, chopped
1 tablespoon red pepper flakes (to taste)
2 teaspoons ground ginger
3 cups of chicken or veggie broth
1 cup of coconut milk
1 1/2 tablespoons of soy sauce
1 1/2 tablespoons of creamy nut butter (I used peanut)
1  tablespoon of fish sauce
1/2 lime, juiced
1/2 teaspoon sugar

Directions

Soften onions and garlic in coconut oil over low-med heat; after the mixture warms, you can add more fat or add a few tablespoons of water instead (the outcome works, either way).  Keep an eye on it so it doesn't burn and, once translucent, add the carrots, ginger, red pepper, and broth.  Bring to a boil and then simmer for 45 minutes or so, until the carrots are easily pierced.  Add the rest of the ingredients and lower heat.  Give it a few minutes to let the flavors come together. Use an immersion blender to puree the soup (or a regular blender, carefully).  Keep warm and enjoy.

Coconut Quinoa (4-6 servings) from The Inspired Vegan by Bryant Terry

Ingredients

1 cup water
1 cup coconut milk
1 teaspoon salt
1 cup rinsed quinoa 
2 tablespoons of dry (unsweetened) coconut flakes

Directions

Combine coconut milk with water and salt in a medium saucepan over high heat.  Bring to a boil and add the quinoa and dried coconut.  Lower the heat immediately (watch so it does not boil over), cover, and turn to "low."  Simmer for about 20 minutes.  Turn off the heat and steam with the lid on for five more minutes. Fluff with a fork, season to taste, and enjoy.

Lemon Chicken Orzo Soup




I found this recipe on the Good Life Eats blog. Believe it or not, it was a delicious soup to enjoy on a hot summer day. Try it for yourself - I like this one BETTER than the one Panera offers on their menu.

INGREDIENTS:

For The Chicken:
1 lb. chicken - boneless, skinless breasts
1 stalk celery, cut into thirds
half of lemon sliced
handful of fresh parsley
1/4 t. each, salt and pepper
2 bay leaves
3 sprigs thyme
1 cup water
1/2 cup chicken broth (I added more to cover chicken)

For The Soup:
1 onion, dices
2 cloves garlic
1/3 cup white wine
3 carrots, sliced into rounds
6 cups chicken broth
1/2 - 3/4 cup orzo pasta, uncooked
3 egg yolks
2 - 3 T. fresh lemon juice
salt and pepper to taste
2 T. fresh parsley, minced
1 1/4 t. fresh thyme
2 - 3 large handfuls of fresh baby spinach, chopped

DIRECTIONS:

For the chicken:
Combine all the ingredients in a medium pan. Bring to a boil and simmer until chicken is cooked. Remove from heat. Remove chicken to a plate and set aside. Shred with a fork when cool. Toss remaining ingredients. (the original recipe called for using a pressure cooker. See their website for all the directions if you choose to use one.)

For the soup:
Add 1 T. of olive oil in a large dutch oven. Saute the onion over medium-high heat until golden and tender. Add the garlic and saute for 1 minute more.

Add the white wine and cook for 2 minutes. Stir in the broth and carrots. Bring to a boil. Meanwhile, whisk the egg yolks and lemon together. Add 1 cup of hot broth from the dutch oven very slowly to the egg yolk mixture, whisking as you pour. Then, transfer the mixture to the dutch oven, Stir in the orzo and chicken.

Continue cooking over medium-low until the pasta and carrots are tender. Just before serving, season to taste with salt and pepper. Add the thyme, parsley, and spinach. Serve immediately

Serve with hot fresh bread, or a handful of oyster crackers. ENJOY!

Corn Chowder

This recipe I got from my husband's cousin. It is very yummy! (it's actually the Old Mill's recipe, in Pigeon Forge!)

1 T. margarine
3 c. diced onions
3/4 c. crumbs (from unsalted oyster crackers, which I have used the salted and you could use about any cracker)
1/4 c. flour
2 c. water
1 c. clam juice (never tried to make it without it, but I am sure you could use chicken broth in its place; you can find it though by the canned meat)
2 c. chicken, beef, or ham broth
3 c. diced potatoes
2 c. half and half
2 c. frozen corn, defrosted
1 red and 1 green bell pepper, chopped and sauteed briefly in butter, add salt and fresh ground pepper, to taste

Mix liquids and butter, add potatoes and onions, cook until done. Mix cracker crumbs, flour and seasonings. Add to potatoe mixture. Add red and green peppers, mix well, bring to a boil, add cream and corn, simmer for 15-20 minutes.

Robbie's Copy Cat Recipies - Zuppa Toscana Soup like Olive Garden's®

I LOVE soups, in fact, I could probably eat soup and salad for breakfast, lunch and dinner every day of my life. So anyways, last night I tried the Zuppa Toscana Soup like at Olive Garden and I must say...it is pretty spot on. I added zucchini because I love zucchini but it really didn't make it taste any different at all. If I were to do this again (which I will) I would not put as much sausage in it.

I have included the recipie below but strongly urge people to visit the site and try some of the other recipies out. If anyone tries one let us know how it went! I have the ingredients to make Bruchetta like at Carraba's next ;)


Zuppa Toscana Soup like Olive Garden's®
Spicy sausage and bacon, russet potatoes and
greens in a creamy broth.

Serves: 10
Prep. Time: 0:35

1 lb. spicy Italian sausage - crumbled
1/2 lb. smoked bacon - chopped
1 qt. water
(2) 14.5 oz. cans (about 3 2/3 cups) chicken broth
2 lg. russet potatoes - scrubbed clean, cubed
2 garlic cloves - peeled, crushed
1 med. onion - peeled, chopped
2 cups chopped kale OR Swiss chard
1 cup heavy whipping cream
salt and pepper - to taste


-In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
-In a skillet over medium-high heat, brown bacon; drain, set aside.
-Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender.
-Add sausage and bacon to pot; simmer for 10 minutes.
-Add kale and cream to pot; season with salt and pepper; heat through.

Ribollita - Italian Vegetable Soup


I made this for the first time last night for our Anniversary Dinner. It was wonderful - 5 stars!! I got it from the Williams Sonoma Italian Cookbook - enjoy!

Difficulty: Easy
Prep Time: 30 minutes
Cook Time: 1 hour
Servings: 8

INGREDIENTS:
1 15 oz. can Cannellini beans
1 yellow onion, chopped
1 celery stalk, chopped
2 carrots, peeled and sliced
1 large potato, peeled and diced
2 zucchini - sliced and halved
1/2 cup extra virgin olive oil (EVOO)
1 cup cauliflower, coarsely chopped
4 - 5 kale leaves (they recommended dinosaur kale)
1 cup shredded swiss chard leaves
1/4 cup minced fresh herbs: italian parsley, rosemary and sage
2.5 quarts chicken stock
Salt and freshly ground pepper
12 - 15 slices day old coarse country bread with crusts
1/2 cup freshly grated parmesan cheese

Drain beans and set aside.

In a large soup pot over medium high heat, heat the olive oil. Add the onion, celery and carrots and saute' until the onion is golden, 3 - 4 minutes. Add the cauliflower and cook, stirring frequently, until tender-crisp, about 5 minutes. Add the kale, chard, zucchini and potato (in that order) and cook stirring constantly for 5 minutes.

Add the mixed herbs and the beans to the pot. Pour in the stock, bring to a boil over medium-high heat, and cook uncovered until the vegetables are tender, about 30 minutes. Season to tast with salt and pepper. Remove from the heat.

Meanwhile, preheat the oven to 425 degrees.

Ladle enough soup into a 13 x 9 baking dish to cover the bottom. Top with 4 - 5 toasted bread slices, trimming them to fit if necessary, and then with a layer of soup. Sprinkle evenly with 1/2 of the Parmesan cheese. Repeat the layers of bread, soup and cheese. Bake until heated through about 20 minutes. Remove from the oven and drizzle with olive oil.

Ladle the ribollita into warmed soup bowls and serve.

IMPORTANT NOTE: After making this last night I think I would make one change...spread olive oil on bread and sprinkle with parmesan cheese. Place under broiler until browned and cheese melts. Place one or two slices in individual bowls and ladle hot soup over - serve immediately. (If anyone tries this recipe with this revision, please let us know if it works.)

Old Fashioned Vegetable Soup


I love this recipe! Except for the prep time it's very simple. I give it another 5 stars!! Really we should rename this blog "My Delicious 5 Star Life". Who would take the time to post a recipe that is less than that?

INGREDIENTS:

1-1/2 lbs. beef or ham bones with meat
8 cups water
3 stalks celery, chopped
3 large carrots, chopped
2 medium onions, chopped
1 (28 ounce) can tomatoes, undrained and chopped
1 bay leaf
1-1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
2 cups frozen green lima beans
1 cup frozen corn
1 cup frozen green peas
1/2 cup macaroni

DIRECTIONS:

Combine first 12 ingredients in a large dutch oven. Bring to a boil; cover, reduce heat, and simmer 1 hour. Add lima beans, corn and peas. Return to a boil; reduce heat and simmer, uncovered 15 minutes. Stir in macaroni, and continue to cook for 10 - 12 minutes. Remove bay leaf.

Yield: 3-1/2 quarts

Hearty Bean and Barley Soup


My family loves this every time I think to make it. Definitely a 5 star!

Difficulty: Easy
Preparation: 30 minutes
Cook Time: 2.5 hours on stove - all day in slow cooker

INGREDIENTS:
2 lbs. dried Great Northern beans
2 quarts water
1 cup fine barley
1 ham hock
2 cups coarsely chopped ham
1 lb. ground beef, cooked and drained
1 large onion, chopped
8 cloves garlic, chopped
6 carrots, sliced
4 - 10 1/2 oz. cans beef consomme'
1 - 1.5 teaspoon salt
1 teaspoon pepper
1/4 cup Worcestershire sauce
1/2 teaspoon hot sauce
2 fresh jalepeno peppers, split and seeded

DIRECTIONS:
Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak overnight (or use the quick soak method on package). Drain. Add 2 quarts water; bring to a boil. Add remaining ingredients; cover, reduce heat, and simmer 2.5 hours, stirring occasionally. Yield: 5.5 quarts.
Note: Add water, if desired, for a thinner consistency. Soup may be frozen.

Taco Soup

Taco Soup
2 large cans of diced tomatoes
2 small cans of navy beans (can substitute any kind of beans within the same calories)
2 small cans black beans
2 cans of corn
2 packages of dry Hidden Valley Ranch Dressing
2 packages of taco seasoning
2 cups of water

You can add meat of your liking to this. Chicken is great or hamburger too! I used 4 boneless skinless chicken breasts and cubed it up. (I boiled it)
Mix above ingredients together. You can store in a bowl in your refrigerator or you can measure out 1 cup servings and place them in your freezer.
Heat to serve.

Without meat this is 1 point for a 1 cup serving.

This makes a big pot of soup. If you want less, just half the recipe.

Loaded Baked Potato Soup and Garlic Cheese Biscuits

Okay ladies, this isn't on my diet but it is OH SO GOOD!!!


BAKED POTATO SOUP
1 three pound bag red potatoes
1 pound Velveeta cheese
1 bunch fresh parsley
1 pound bacon
1 bunch green onion
2 T. flour
8 cups half and half (or a mixture of part milk/part half and half)
1/4 cup real butter
2 T. hot sauce
Start out by chopping the potatoes into cubes (leave on the skin), and boil them until they are semi-soft. While the potatoes are cooking, chop the parsley, onions, etc . . . and fry up the bacon which you cut up into little peices. Cut up the velveta into chunks and have it ready too.
You then need to make a rou. You will need to use a deep pan because all the ingredients end up in this pan. Melt the butter then add the flour and slowly stir in the milk. If you have any lumps, use a whisk to stir. You will want to stir this while it is heating up and just starts to get thicker (it will still be watery). Then start adding your cheese chunks slowly, and your soup will start to thicken. Then add the hot sauce, bacon, and the drained potatoes, parsley and onions.
You can serve this with extra toppings, anything you might like on a baked potato like, extra bacon, green onions, sour cream, shredded cheese, etc.
You can also serve this with cheesy garlic biscuits . . . .which are wonderful crumbled up into the soup!

CHEESY GARLIC BISCUITS
2 cups Bisquick
1 cup shredded cheddar
2/3 cup milk
1/2 t. garlic powder
1/4 cup melted butter
1/2 T. parsley flakes (optional)
Mix Bisquick, milk, & cheese to a soft dough. Stir vigorously. Drop by spoonfuls on greased cookie sheet. Bake for 10 minutes at 450 degrees. Melt butter then add the garlic powder and parsley flakes. Brush over the biscuits before removing from cookie sheet.
(This recipe is actually called Red Lobster Rolls and taste just like the rolls they serve at Red Lobster!)
