Healthy Energy Bars














                •   

  • Oil for greasing pan
  • 1 cup quick cooking rolled oats
  • 1/2 cup raw unsalted sunflower seeds
  • 1/2 cup ground flax seed
  • 1/4 cup whole-wheat flour
  • 3 T. toasted pumpkin seeds
  • 1/2 cup dried cherries
  • 1/2 cup raw peanuts
  • 3/4 cup dried cranberries
  • 1/2 cup whey protein powder
  • 1/2 teaspoon ground cinnamon
  • 1.5 ounce maple syrup
  • 1 ounce honey
  •  2 large eggs
Directions: 
Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.
Place all ingredients except the syrup, honey and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.
Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.

Tips: 
This is a very adaptable recipe.  The original recipe come from Ellie Krieger from Food Network.  I omitted, added and changed the ingredients to fit my taste.  You can do the same, open your pantry and be creative!  I'd love to hear what you came up with!

Tuscan Pasta Salad



I made this tonight using a recipe from a box, but changing it according to the ingredients I had on hand. You can serve it hot or cold. It turned out to be fantastic!

Preparation: 15 minutes
Rating: 5 stars

INGREDIENTS:
1 16 oz. box pasta of your choice (I used Barilla Elbow and Bow Tie)
8 oz. jar roasted red peppers, drained and chopped
3 T. EVOO (extra virgin olive oil)
2 cups shredded cheese (six cheese Italian blend)
20 leaves fresh basil or 1 T. dried basil
2 T. pine nuts
1 t. minced garlic
Salt and Pepper to taste

DIRECTIONS:

Cook pasta according to package directions minus 1 minute. Drain well. Pour pasta into a large bowl. Sprinkle with olive oil and add all other ingredients. Stir well. Serve immediately, or chill to serve cold.
